An easy and aromatic rice recipe perfect for lunch box or for travel. We are used to cook many variety recipes but unfortunately many don’t make this peanut rice. You can make this peanut podi in prior and store it for a while. Mix it with a cup of rice and that’s it! Finished! It’s such an easy and simple rice recipes. Everyone will sure love the taste.
You can use fresh rice or left over rice for the recipe. It goes well with papad or as it is. Let’s start cooking!
Step wise cooking:
List of required ingredients.
For making peanut podi, dry roast peanuts along with cumin seeds, sesame seeds and garlic.
Add dry red chilies and coconut. Switch off the flame and cool down the mixture.
Transfer it to a blender and grind to a coarse powder.
Let’s prepare the rice. Heat a tsp of oil and once hot, splutter mustard seeds, urad dal and channa dal. Let the dal turns it color.
Add curry leaves followed by peanut and asafoetida.
Next add the ground peanut powder. Time to add the cooked rice. Mix it well to combine.
